Ingredients
- 1 tablespoon oil
- 1 tablespoon butter
- 1 onion finely chopped
- 1 rib celery finely chopped
- ½ green bell pepper finely chopped
- 1 lb ground chicken
- 3 tablespoon cajun seasoning
- 3 cloves garlic minced
- ½ cup crushed tomatoes
- ½ tablespoon brown sugar
- ½-1 teaspoon hot sauce optional
- ½ cup heavy cream
- ¼ teaspoon salt
- 4 burger rolls

Melt the oil and butter in a large skillet over medium-low heat.

Add the chopped onion, celery, and bell pepper. Cook for 7-8 minutes until softened and cooked down.

Add the chicken and cook, breaking it up as you go. Give it 5 minutes to change color, then sprinkle over the Cajun seasoning and minced garlic.

Cook for a minute, but don’t allow the garlic to change color.

Add the tomatoes, brown sugar, hot sauce, and cream, mix well, then reduce the heat to low.

Cook for 15 minutes, stirring frequently to ensure it doesn’t catch on the bottom of the skillet.
