Ingredients

  • 1 cup unsalted butter softened to room temperature
  • 1/3 cup dried cranberries finely chopped
  • 1/4 cup honey or maple syrup, you can also use agave
  • 2 teaspoons orange zest finely grated
  • 1/3 teaspoon vanilla extract optional
  • pinch of salt


Instructions

  • Add all the ingredients to a small-medium bowl, and using an electric mixer beat until blended.
  • Transfer to a jar with a lid, or scoop onto a piece of plastic wrap and mold it into a log.
  • Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
  • Enjoy on bread, pancakes, waffles, or as a sweet dip.
