Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs or breasts

Grains

  • 1 cup long-grain rice

Liquids

  • 2 cups chicken broth
  • 1/2 cup BBQ sauce

Fats

  • 1 tbsp olive oil


Instructions

  1. Heat a drizzle of oil in a large skillet over medium heat.
  2. Add chicken and cook until browned on both sides (5-7 minutes).
  3. Stir in rice and cook for 1-2 minutes until coated in juices.
  4. Pour in chicken broth and BBQ sauce, then stir to combine.
  5. Bring to a simmer, cover, and cook on low for 20 minutes.
  6. Remove from heat, let sit for a few minutes, fluff rice, and serve hot.
