Pesto Pasta Grilled Recipe – Complete Guide

Ingredients

  1. 2 boneless skinless chicken breasts, about 1lb
  2. 1/2 tsp garlic powder
  3. 1 tsp dried Italian seasoning
  4. 1/2 tsp salt
  5. 1/2 tsp fresh cracked pepper
  6. 1 box short cut pasta, cooked according to package instructions
  7. 1 cup prepared basil pesto
  8. 1/3 to 1/2 cup grated parmesan cheese
  9. 1/4 cup toasted pine nuts for ganish, if desired


Instructions

  1. Heat grill to 350 degrees.
  2. Season chicken with garlic powder, Italian seasoning, salt and pepper.
  3. Grill chicken until cooked through, about 8 minutes per side.
  4. Cover with foil and let the chicken rest for 10 minutes.
  5. After resting, cut chicken into thin slices.
  6. In a large bowl, combine cooked pasta, chicken, pesto and cheese.
  7. Mix well, until chicken and pasta are well coated with the pesto. Add a small amount of the pasta water if it seems dry.
  8. Finish by adding lots of fresh cracked pepper.
  9. Serve hot or at room temperature.
