Ingredients
- 1 ¼ cup oat flour do NOT pack… scoop into measuring cup and level
- 1 cup pumpkin puree
- ¾ cup greek yogurt
- 2 large eggs
- ½ cup packed vanilla flavored protein powder (~50 grams)
- ½ tsp pumpkin pie spice
- 1 tsp Cinnamon
- 1 tsp Baking powder
- 1 tsp baking soda
- ½ cup dark chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Add the oat flour, pumpkin, greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda to a large mixing bowl and stir with a hand mixer or wooden spoon until combined. Stir in the chocolate chips, saving some to sprinkle on top.
- Distribute into 12 greased muffin liners.
- Bake for 25-30 minutes or until a toothpick comes out clean.
