Ingredients
- 1 large onion or two small ones diced
- 2 cloves of garlic minced
- 3 tablespoons olive oil
- 3 pounds of zucchini peeled and sliced
- 6 oz of fresh baby spinach
- Salt to taste
Instructions
- Saute onions onions until translucent on a medium flame
- Add minced garlic and saute until fragrant, about 30 seconds
- Add sliced zucchini and water just to cover the zucchini
- Add salt
- Cook for ½ hour on medium to low flame until vegetables are soft
- Remove from flame
- Puree until smooth using an immersion blender
- Add spinach and return to flame just until spinach is wilted
